Little time remains before Madrid becomes the gastronomical focus of the world. January 24th-26th, my city will host Madrid Fusión 2012, celebrating the 10th anniversary of this gourmet trade show.
Named this year "The Gates of the Future", the floor of MF will feature four main sections, broken into La tierra, nuestra despensa (The Earth, Our Pantry) with Paolo Lopriore of Il Canto, Peruvian Pedro Miguel Schiaffino, and Swedish chef Magnus Ek to name a few, Dulcefusión (Sweet Fusion) featuring Catalan Jordi Roca of El Celler de Can Roca, Alicante brothers Paco and Jacob Torreblanca who is sweeping the country and world pastry scene, Últimas Tendencias (Latest Trends) with Portuguese born Nuno Mendes and his "Long Table", Venezuelan chef Nelson Mendez and Spain's Paco Morales -who Ferran Adrià claims is a young chef to watch in Spanish cuisine- finally, Bajo Coste (Low Cost), including Oriol Rovira of Sagás in Barcelona and Francis Paniego of Echaurren in La Rioja.
These professionals combined with some 300 other participants will shine light on the traditions, trends, innovations, and issues facing the food industry, as well as notable new-comers in the industry, ranging from gourmet haute cuisine to gastropubs and finger foods.
Others will take the stage to answer questions and debate some of the hottest culinary topics of 2012. Highlighted names include chef Heston Blumental of the three-Michelin starred restaurant The Fat Duck and Bernando Hernández who is Google's Worldwide Director of Emerging Products and will certainly explain the future and current position of Google's new culinary web product since their 2011 acquisision of Zagat guides. Also showcased at the 2012 event will be the invited country Korea, whose prominate chefs include Yim Jung Sik and San Hoon Degeimbre (a nice review of his restaurant in Belgium, L'Air du Temps, here).
Aside from the obvious food fetishes throughout MF 2012, wine will also be a main player in this year's event, as one can taste and admire at Enobar, a permanent exposition of wine tasting, mobile applications and be a part an on-site documentary "The Best Wines in Spain." Later slide over to ExpoBodega, a meet & greet with top wineries.
